Premium Speciality Tea
Kabusecha means “covered tea”, similar to gyokuro, considered the most premium quality of tea. The tea is shaded in order to develop more umami and lower bitterness. Kabusecha is shaded less than a Gyokuro which puts it right between gyokuro and sencha in terms of umami and sweetness.
Our teas are brewed with reverse osmosis water, which brings out all the natural and unique characteristics of each tea.
These high quality senchas are infused at lower temperatures, which allow all the unique flavour profiles to come through. For a hotter brew we suggest our Green Americano, Fukamushi, Genmai or Houjicha.
We recommend enjoying these teas in our Cafe for the best experience. If taking away, will be brewed when you arrive for pickup. If you are in a rush let us know in the comment section at checkout.
Sawa First Flush Conventional, Yame Region- This kabusecha has deep-green, needle-shaped leaves, with notes bok choy, nori, and artichoke.
Hatsuno First Flush Conventional, Yame Region–This emerald-hued, deep-steamed (fukamushi) kabusecha is vibrant and aromatic. Lingering notes of steamed spinach, are accented by notes of dried gardenia and fresh grass.
